Creamy Lentil Soup




  • Little bit of Love Earth Cooking Coconut Oil
  • 4 Cups of vegetable broth
  • 1 Cup uncooked Love Earth Red or Yellow Lentils
  • 1 Cup chopped yellow onion
  • 3/4 Cup chopped carrots
  • 2 Tsp Love Eath Cumin Seeds
  • Pinch of salt for taste
  • 1/2 Tsp Love Earth Black Pepper Powder
  • 5 Thyme Sprigs
  • 4 Garlic cloves, minced
  • 2 Cups of Love Earth Chickpea, rinsed and drained
  • 3/4 Cup water
  • 2 Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • 2 Cups thinly sliced lacinato kale




  1. Coat a 5- to 6-quart slow cooker with cooking coconut oil. Place broth and the 8 ingredients (through garlic) in slow cooker; stir well. Cover and cook on low 7 hours.
  2. Process chickpeas, 3/4 cup water, oil, and lemon juice in a blender until smooth. Add chickpea mixture and kale to slow cooker; stir well. Cover and cook on low 30 minutes.
