Chickpea Spinach Salad with Cumin Dressing




  • 500g of Love Earth Organic Chickpea (Boiled)
  • 1/4 Cup of Parsley
  • 1/2 Cup of Chopped Red Onion
  • 1/4 Cups of Love Earth Rice Bran Oil
  • 3 Tbsp of Lemon Juice
  • 1/2 Tsp of Lemon Zest
  • 1 1/2 Tsp of Love Earth Organic Cumin Seeds (Ground)
  • 1/8 Tsp Cayenne Pepper
  • 4 Cups of Baby Spinach
  • Love Earth Himalaya Rock Salt and Black Pepper Powder for taste



Yogurt with Orange Essence:

  • 1/3 Cup of Plain Yogurt
  • 1/4 Tsp of Orange Zest
  • 2 Tbsp of Orange Juice
  • 1/2 Tsp of Honey




  1. In a medium bowl combine the chickpeas, parsley and onion. In a small bowl whisk together the rice bran oil, lemon juice, zest, cumin, cayenne pepper, salt and black pepper. Pour the dressing over the chickpea mixture and toss to combine. Serve the chickpea salad over a bed of spinach leaves. Top with the yogurt sauce and a sprinkle of mint, if using.
  2. In a small bowl, stir together the yogurt, orange zest, orange juice and honey.
